The grapes originate from vineyards in the hills (100-300 meters above sea level) and are characterized by marine sedimentary soils with fine clays. The grapes are manually harvested in wooden cases. It follows the vinification in white with immediate separation of the must from the skins. The wine obtained goes through the sparkling process which takes place in autoclave at 14° C with selected yeasts specific for Pinot Noir. The process has a duration of between 40 and 60 days and includes the daily pump-over of the product. The wine is then stabilized for a week at a temperature of -5° C and finally filtered and bottled.
